Not an easy thing to explain. To me it's like the difference between Colour and Black & White
Put in simple terms Stereo is where sound comes from two speakers and when sound from each speaker is different in it's content. Stereo also conveys space where mono cannot.
For instance: If you were to sit in front of a real orchestra you would not hear exactly the same thing in both ears. If recorded properly in stereo you would get more or less the same effect.
Maybe you wanted to give the effect of someone walking across a room during a radio play. This is easy in stereo as they can go from the left speaker to the right - with mono how could you tell? you could tell someone was moving about but not where.
Stereo I often find can bring music to life. The sound has more room to move. You have a 180 degree area in which you can place the sounds.
"This is the life" in stereo has a fantastic big band sound - recorded in stereo this leaps out at you - in mono it sounds flat.
Listen on a pair of headphone to a song you have both in mono and stereo and you'll soon see the difference.

I went with friends to see 'U2 3D' on the giant Imax screen at Bradford last night.
The 5.1 surround sound was awesome, if the camera was on the stage with the band, the sound was mixed to represent band members who might be behind you at that moment, their vocal's changed to either the rear left or rear right channels.
